The best truffle qualities that can be harvested in Italy are the prized white or trifola, the prized black or Norcia truffle, the bianchetto or marzolino, the summer black or scorzone, the moscato and the winter black.

It is, however, always an extraordinary product of nature in the form of the tuber, extremely aromatic and intense, available in very limited quantities and varying from year to year depending on the season from the meteorological point of view, the position and the type of soil. Learning to recognise it, look for it and harvest it is a great privilege.
